Marinated Fresh Cherries Arugula and Goat Cheese
1 baguette (24 slices)6 oz goat cheeseOlive oilSalt and pepper2 cups arugula 1 lb pitted fresh cherries, halvedBalsamic vinegar Preheat oven to 400 degrees. Pit cherries and cut them in half. Marinate cherries in a good balsamic vinegar for 15 minutes. Spread goat cheese on each baguette slice and lay on baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake about 10 minutes or until cheese is warm. Lay 1 leaf of arugula over the baguette slices than add 2 cherry halves. Spoon some of the balsamic marinade over the final product. Serve baguettes warm topped with arugula & cherries. Serves 6. Concept courtesy of Simple Gourmet.
