This aged spirit of 86% apples and 14% pears sports a very fine and dynamic perfume, compliments of our late, great bain-marie potstill.

The apples are a mixture of varieties (pippin most notably) from all over the country, some grown from dry-farmed orchards right here in Santa Cruz, and others hailing from high altitude orchards of Colorado. The Williams pears are among the finest in the world, coming from White Salmon, WA, along the Columbia River. The component brandies spent an average of 13 years in French oak barrels.

Very conservative heads and tails cuts ensure an extremely clean and gentle spirit. Though certainly no rocket fuel, this spirit will likely take you wherever you wish to journey.
