Winemaker Notes
Representing the last vintage of riesling grapes hand harvested from the gravelly soils of our late Ca’ del
Solo estate vineyard, located just outside of Soledad
in Monterey County, this effervescent Riesling was
fermented to dryness in stainless steel, before tirage
bottling in the traditional méthode champenoise
style in June 2007, then aged on lees for 30 months
and disgorged in February of this year. No dosage
was added to the wine, as to maintain its crisp,
refreshing aspect and ensure the fullest expression of
its bracing minerality.
